Roasted Delicata Squash, Pomegranate and Arugula Salad October 23, 2022August 19, 2023 Have you ever tried this salad by any chance? If not, then try it now and you will see that it is going to steal the show at your next family event. Its is a perfect winter squash recipe full of warm and fall flavours. The good part of this recipe is that it is both sweet and tangy which is indeed a perfect combination for snacking. It can be served as an appetiser, side dish or snacks. The main ingredient for this recipe is Delicata Squash, all the other ingredients just enhance the taste and add extra flavour to the recipe. Last year I served this recipe to my colleagues over a thanksgiving and I still cannot forget their reactions. I added some meat to make it a full dish instead of an appetiser and GOD! It was literally the best thing I could have done to make it more delicious. You may also add extra fruits and vegetables to add more nutrition value to the recipe. This is so quick, easy and healthy recipe for winters. I have always been a big lover of yummy and colourful salads, but this one has my heart. Before writing the recipe I would definitely want to share some of nutrition values for this recipe. It is a low calories dish with weight loss properties, which has vitamin B, C, K and Chlorophyll. The ingredients provide cancer protection and eye nutrition along with high antioxidant properties. Ingredients: 2 delicate squash 1 tablespoon avocado or coconut oil 1 teaspoon salt 4 cups Arugula Two third cup pomegranate seeds One third cup pumpkin seeds One fourth tablespoon olive oil 2 tablespoon maple syrup Salt and pepper for dressing Instructions: Preheat the oven to 430 F. Slice the squash into two equal halves, remove the seeds from each round. Cover the squash with a tablespoon of coconut or avocado oil. Make a light coating of oil on to the squash. Bake the squash for around 30 minutes until it is golden brown. Once the squash is cooled down, mixed the other ingredients I.e pomegranate seeds, pumpkin seeds and other desired vegetables or fruits. For salad dressing prepare a a mixture of maple syrup, olive oil and slat with black pepper. Garnish the salad with dressing and enjoy the healthy Delicata Squash.
