Pumpkin Chili Recipe October 16, 2022August 19, 2023 Whether it is fall or autumn it doesn’t matter as long as we know it’s pumpkin season. Last season when I was not a self proclaimed chef, I used to purchase a lot of ready made pumpkin products, but later on I realised that pre-made pumpkin products contain high level of sugar and calories, which were increasing my weight so much. I decided to give up on pumpkin products, until I started craving like hell. Only then I figured out I should try some healthy recipes of pumpkin to suppress my cravings for pumpkin. Either its pumpkin or pumpkin seeds, both are fully enriched with nutrients and health benefits since they contain multiple vitamins, minerals antioxidants and fiber. Pumpkin puree is a low calorie product which helps you stay fuller for longer and reduce weight. It is a rich source of vitamin C which helps in improving the immune system and flush out the toxins from the body. Pumpkin is also a good source of vitamin A which improves eyesight, skin health and other functions. It is known that a half cup of pumpkin puree contains the 100% of daily vitamin A value for human body. You can easily make your own home made pumpkin puree by simply baking a pumpkin, cutting it in quarter pieces, removing the seeds and then pulp and stem. Once your home made puree is ready, you can add it into almost every relative recipe to get benefits of pumpkin nutrition. Ingredient: 2 tablespoon of extra virgin olive oil Half large onion 1 small carrot 1 rib of celery 3 cloves of crushed garlic 1 tablespoon of chilli powder 1 tablespoon of smoked paprika 2 cans of either red kidney beans 1 large tomato 2 cups of vegetable broth Half cup of pumpkin puree Instructions: Place a medium soup pot over medium flame and add extra virgin olive oil Add the chopped onions, garlic, celery and carrots into the pot Saute the mix until all the veggies are soften Add the spices and pumpkin puree to the pot and allow them to cook for at least 2 minutes Add tomatoes and vegetable broth and stir the mixture for 15 to 20 minutes Adjust seasoning and serve the delicious pumpkin chili.
