  • 400 g coconut cream

  • Using a bowl, mix coconut cream, chia seeds, and honey. Then, cover the bowl and store it in the fridge for at least 4 hours. For a better result, you can store it in the fridge overnight.
  • Once it is thickened, prepare the serving glasses and divide the dessert equally. Top it with coconut and berries.

Peanut Butter and Chocolate Fridge Bars

  • 2 large bananas (peeled and chopped)

  • 1 tablespoon coconut flour
  • 1/4 teaspoon sea salt

Chocolate Topping

  • 1/2 cup raw cacao powder

Instruction

  • Use a square cake pan and then grease the base and the sides. Place the baking paper and let the sides overhang. Next, place cacao, peanuts, salt, and 1 cup of oats in the food processor and then mix until finely chopped. Add oil, raisins, remaining oats, and maple syrup. Mix it and then spread it in the cake pan. After that, store it in the fridge until it is firm (around 1 hour).
  • For the filling, blend peanut butter, banana, oil raisins, flour, maple syrup, and salt. Once it is mixed, spread the mixture over the oat base and then place it again in the fridge until it is firm.
  • For the topping part, use a heatproof bowl and place it over the saucepan that is filled with simmering water. Make sure the bowl doesn’t touch the water. Cook the topping mixture while keep stirring until the mixture is thickened. Pour the topping over the second layer. Then, put it back in the fridge for at least 6 hours. Once the bar has thickened, cut it as you like and sprinkle it with extra salt and peanuts.
  • You can store the bars in an airtight container and it will last for a week.

Neapolitan Ice Cream (Sugar-Free)

Ingredients

  • 2kg Greek-stye yogurt
  • 250 grams strawberries, chopped
  • 1-liter rice malt syrup

  • 1/3 cup cacao (sifted)
  • 1 vanilla bean (scrap the seeds)

Instructions

  • Whisk rice malt syrup and yogurt and then divide the mixture into three bowls.
  • Add strawberries to one bowl and stir it with the mixture.
  • Add the coconut cream to the second bowl for vanilla flavor.
  • Mix vanilla seeds, 2 tbsp boiling water, and cacao in a bowl. Then add the remaining yogurt. Stir the mixture to combine.
  • Take three zip-lock bags and then transfer the three flavors. Freeze it overnight on a tray.
  • On the next day, take the ice cream container with a 2.5 L capacity. Take a thick cardboard and cut it to fit the length and depth of the container.
  • Use plastic wrap to wrap the cardboard and then wedge it into the dish so it will divide into 3 parts.
  • Next, cut the strawberry mix and then transfer it to the food processor. Whiz it until smooth. After that, pour it into one side of the container.
  • Repeat the chocolate flavor and pour it onto the other side of the container so there is a gap in the middle part which is for the vanilla flavor.
  • Wedge another cardboard in the center to hold the large cardboards stay on its place.
  • Freeze the mixture in the freezer until it is firm.
  • For vanilla flavor, repeat the food processor step.
  • Next, remove the cardboard strips and then pour the vanilla flavor into the center. Freeze it again until it is frozen.

Strawberry Frozen Yoghurt

It is a kids-friendly dessert! Healthy and tasty! The making process is simple, and you just need some ingredients which are all of them available in your kitchen.

Ingredients

  • 750 grams strawberry
  • 500 grams of plain Greek-style yogurt
  • 1/2 cup honey

Instructions

  • First, mix the strawberries and honey and then process the mixture until smooth. After that, strain the mixture and discard the solid. Place it back in the processor.
  • Add yogurt to the processor and then mix it until smooth. Pour it into two containers, cover them with plastic wrap, and then freeze it until it is firm.

  • Grease the patty cases using coconut oil. Mix coconut milk, banana, syrup, oil, and 1 tbsp peanut butter in a blender. Mix it until smooth and then transfer it to a jug.
  • In a small bowl, mix the remaining peanut butter and salt. Then, place a little peanut butter mixture in the center of the case. Pour the banana mix and leave a 5 mm gap at the top. Next, store it in the freezer until it is firm.
  • For the topping, mix the cacao, oil, and syrup in a heatproof bowl. Place the heatproof bowl over the saucepan that is filled with simmering water. (Make sure to not let the bowl touch the water). Whisk the mixture until it is smooth. Remove it from the heat and then let it cool for around 2 minutes. Spread it on the peanut butter cup. Then, return it to the freezer and store it until it is set.
  • Serve the ice cream and sprinkle it with salt if you like.
